Western Cooking and Japan, 1954 | Excerpt

Translated from the Japanese by Christopher Southward, Summer 2026

I’m preparing to depart Japan early this April for a trip through the United States and Europe. My main objective for this journey is to serve as a kind of cultural intermediary, contributing to artistic exchange by staging a series of exhibitions across Europe and America, but I’m especially excited about the European itinerary, where I plan to immerse myself in French, Italian, Belgian, and other national cuisines.

I think I’ll place an ad in a Paris newspaper after I arrive in the hope of stirring up a few used French cookbook collections and a bit of tableware and whatnot to purchase for my collection back home.

I can’t say that I expect much of cuisines other than the French, and something tells me that I just might return home overall disappointed by Western cooking.
